Just Grilled Chicken Salad

We often work so hard on trying to come up with something new for dinner we forget that the simple things are often the best.  When I grill chicken or steaks or anything really I try to grill enough for another meal or grill burgers and chicken so it cuts down on my time in the kitchen the next day.  So this is some leftover grilled chicken, baked would also be fin.

So use whatever vegetables you have  on hand, for this salad I had Lettuce from my garden, cherry tomatoes, red cabbage, bell peppers, carrots, and cauliflower. I left my lettuce leaves large and diced everything else up very small. I like texture in my salads. 

Then I topped with sliced grilled chicken and topped with a light  Balsamic Vinaigrette


1/3 cup vinegar
1/4 cup balsamic vinegar
1/2 cup olive oil
1 TBS Agave
1 tsp House seasoning (salt, pepper, and garlic)

Throw everything in a jar and mix.  Let sit in the fridge if you can for a couple hours for everything to mix well.
