Breakfast Quiche Muffins

This past weekend I had company and for the second morning I really did not have plans for breakfast. I prefer a hot breakfast and when I have company I really want to serve a hot meal. So I thought about using what I had on hand and making a quiche but I really did not have time to let a large quiche cook so I came up with this. 
 8 eggs

3-5 pieces of bacon ( I used left over from the day before) 
1/3 cup milk
1 1/2 cup cheddar cheese 
1/4 cup pepper jack cheese 
1 large onion
2 TBS butter
4 handfuls of spinach 
House seasoning to taste
 

Topped with dice tomatoes and more pepper jack cheese. 

I diced the onion and sautéed it in a pan with the butter. Once they were turning a bit brown I added the spinach and covered just until wilted. While the Onions were cooking, I put the eggs and milk into a large bowl and whisked for about 3 minutes. Then added the bacon, cheeses, and cooked onions and spinach, and mixed well. 

Then Poured the mixture into greased muffin pans and cook at 375 for 15-18 minutes.  This made 25 muffins.

 I topped with a little pepper jack cheese and diced tomatoes.
