Pepperoni Pizza Puffs

My picky 6 year old went wild for these. I only got 20 out of the mixture, and I think he ate half of them.

Pepperoni Pizza Puffs

4 ounces finely chopped pepperonis
3/4 cup flour
3/4 teaspoon baking powder
3/4 cup milk
1 egg, lightly beaten
4 ounces mozzarella cheese, shredded
1/2 cup store bought pizza sauce

Preheat oven to 375*. Greese a 24 cup mini muffin pan. In a large bowl, whisk together flour and baking powder. Whisk in milk and egg. Stir in mozzarella and pepperoni; let stand for 10 minutes.
Stir the batter and divide among the mini-muffin cups. Bake until puffed and golden, 20 - 25 minutes.
Meanwhile, microwave the pizza sauce until warmed through. Serve the puffs with pizza sauce for dipping.
Tip: Freeze baked puffs in a single layer on a baking sheet, then transfer to a freezer bag. To reheat, bake frozen puffs on a baking sheet in 350* oven for 8-10 minutes.


  1. There is an omission in this recipe. It also calls for 4 ounces finely chopped pepperoni.
