Spinach Balls

Spinach Balls (my friend Lara's recipe - they are really good)

350 degree oven

2 sm boxes of frozen spinach, drained (squeeze dry) and chop
3 cups Pepperidge Farm dry stuffing mix (Herb)
¾ cup melted butter or margarine
6 eggs, beaten
1 cup parmesan cheese (fresh shredded)
1 lb. hot sausage (un-cooked)
1 tsp. black pepper
2 tsp red pepper flakes
3 large garlic cloves (crushed and chopped)
¼ tsp thyme
½ cup onion (fine chopped)

Mix all ingredients together in a large bowl. Mix well until all ingredients are combined. Shape into small balls (size of a walnut) and bake for 20 min, or until done. (making sure that the sausage is cooked, they will be slightly browned on top and bottom) Serve with a mixture of equal parts sour cream and hot sauce.

Makes 5-6 dozen
